Sourdough Discard Tortillas

Not sure what to do with that discard sitting in your fridge? This one's for you. This recipe will make 8 medium tortillas. They will keep in the fridge for 5 days. Prep them beforehand and pull one out for a quick lunch wrap. 
Ingredients:
  • 90 grams warm water
  • 50 grams olive oil
  • 135 grams of sourdough discard
  • 240 grams of all-purpose flour
  • 10 grams of salt

Instructions:

1. In a bowl, whisk together your water, oil and discard.

2. Add in your flour and salt. Whisk until you cannot anymore, then knead into a smooth ball.

3. Cover and rest for 30 minutes.

4. Place your ball onto a floured surface and cut into 8-10 equal portions (depending on tortilla size preference).

5. Roll each portion into a small ball. Use a rolling pin to then flatten out the ball into a circle tortilla.

6. Preheat your pan and lightly oil. Lay each tortilla onto the hot pan for around 1 minute on each side until golden brown spots appear. Do not re-oil.

7. Let cool + enjoy.

*If you have a gas stove, use tongs to grab the warm tortilla and heat it over the open flame for that charred look.
