Blackstone Patty Melt with Homemade Special Sauce

There are some dinners that just hit the spot, and a crispy, buttery patty melt is definitely one of them. This one is made right on the Blackstone with seasoned ground beef, caramelized onions, melty American cheese, and buttery toasted white bread.

The special sauce is creamy, tangy, a little savory, and comes together with ingredients you probably already have in the fridge. Serve these with fresh-cut fries and you've got one seriously good griddle dinner.

Ingredients

For the Patty Melts

  • Ground beef (1 lb makes 3-4 burgers)
  • White sandwich bread
  • Butter
  • American cheese
  • Yellow onion, thinly sliced
  • Burger seasoning of choice (I use this one) (affiliate link)

For the Special Sauce

  • Mayonnaise (1/4 cup)
  • Ketchup (2 tbsp)
  • Worcestershire sauce (just a splash)
  • Pickle juice (just a splash... if you love pickles though, toss in some more- maybe even dice some up)
  • Garlic powder (1/2 tsp)
  • Salt (pinch)
  • Black pepper (pinch)

I'll be honest.... I only truly measure when I'm baking. Taste as you go & measure with your heart. 

Instructions

  1. Make the special sauce. In a small bowl, combine mayonnaise, ketchup, Worcestershire sauce, pickle juice, garlic powder, salt, and pepper. Mix well and set aside.
  2. Cook the onions. Heat your Blackstone over medium heat and add a little butter. Spread the sliced onions over the griddle and cook until soft, golden, and caramelized. Move them to a cooler part of the griddle while you cook the burgers.
  3. Cook the beef. Divide the ground beef into portions and place them on the hot griddle. Smash or shape into thin patties and season. Cook until browned and cooked through, flipping once.
  4. Add the cheese. Place a slice of American cheese on each patty and let it melt.
  5. Butter the bread. Spread butter on one side of each slice of white bread.
  6. Build the patty melt. Place the bread butter-side down on the Blackstone. Add special sauce, a cheesy beef patty, and caramelized onions. Top with another slice of bread, butter-side up.
  7. Toast. Cook until the bread is golden brown and crispy on both sides and the cheese is completely melted.
  8. Serve. Slice your patty melts in half and serve hot with fresh-cut fries for the ultimate griddle dinner.

The Special Sauce

The sauce is worth making ahead and keeping in the fridge. The combination of mayo, ketchup, Worcestershire, and pickle juice gives it that classic burger-shop flavor with just enough tang.
