Broccoli Cheddar Soup
I love a one-pot meal & this one is great as a “girl dinner” or light lunch. I typically serve it with a crunchy bread loaf and a salad.

Ingredients

2-3 heads of fresh broccoli, chopped

1 small yellow onion, diced

3-4 cloves garlic, minced

2 tablespoons butter

3 tablespoons all-purpose flour

3 cups chicken or vegetable broth

2 cups whole milk
-
1-2 cups heavy cream
-
2 cups shredded sharp cheddar cheese (shred your own)

1/2 teaspoon salt, plus more to taste

1/2 teaspoon black pepper

1/2 teaspoon time
-
1/4 teaspoon rosemary

Optional: bacon bits for topping
1. Sauté the veggies
Melt the butter in a large Dutch oven or soup pot over medium heat.
Add the diced onion and cook for 3–4 minutes, until softened. Add the garlic and cook for another 30 seconds. Add the carrots in next, cook for another 2 minutes.
2. Make the base
Sprinkle the flour over the veggies and stir until everything is coated. Cook for about 1 minute.
Slowly pour in the broth while stirring constantly to prevent lumps.
Add the milk and heavy cream, then stir to combine. Let it come to a light boil.
3. Add the broccoli
Add the chopped broccoli and seasonings.
Bring the soup to a gentle simmer and cook for about 15–20 minutes, or until the broccoli is tender.
*Tip- sometimes I will boil the heads of broccoli beforehand so it’s quick and ready to go.
4. Add the cheese
Turn the heat down to low and slowly stir in the shredded cheddar a handful at a time. Make sure to shred your own cheese to keep this as smooth and creamy as possible.
Keep stirring until the cheese is completely melted and the soup is smooth and creamy.
Taste and adjust the seasoning as needed.
5. Serve
Ladle into bowls and top with a little extra shredded cheddar and cracked black pepper. Bacon if you’d like.
Serve with warm, crusty bread for dipping.
